There are several theories about what are the origins of tapas in Spain, but the most accepted is that of King Alfonso XIII that during a visit to a tavern in the Cadiz area ordered a glass of wine. Due to a sudden gust of wind a little bit of sand lifted into the glass and the waiter covered the next glass of wine with a slice of ham (“tapar” in Spanish means to cover), and the king liked so much this way of serving wine with a “tapa” that he ordered other glasses.
